I thought it might be fun to post some of my favorites treats. This recipe is a "go to" favorite because it is so easy peasy and delicious. Here are the simple steps to yummy carmel corn:

Microwave Carmel Popcorn

4 quarts of popped popcorn                      
1/2 tsp of salt
1 cup of brown sugar                                 
1 tsp of vanilla extract
1/2 cup of margarine (1 stick)                      
1/2 tsp of baking soda
1/4 cup of light corn syrup

tools: measuring cups, measuring spoons, paper bag, wax paper, popcorn popper

I love my popcorn popper. It doesn't need oil and you can put the 1/3 cup of  corn kernels directly in the popper, put the lid on and put it in the microwave on high for 2 minutes 30 seconds to make 1 batch. For this recipe you will want to make 2 batches. Place the popped corn in your paper bag.

 Next, in a 2 quart casserole dish, or other microwave safe dish combine the brown sugar, margarine, corn syrup, salt & vanilla. (photo 1) Heat for 3 minutes on high in the microwave and it will look like photo 2. Stir it and cook for an additional 1 1/2 minutes and it will look like photo 3. Stir in the baking soda and it will become bubbly and turn a carmel color. Photo 4

Pour the mixture over the popcorn in the bag. Roll down the top once or twice to close the bag, and shake to coat the corn. Place the bag in the microwave, and cook on high  for 1 minute. Remove, shake, flip the bag over, and return it to the microwave and cook for another minute.
Dump the popcorn out onto waxed paper to let it cool until coating is set. Once the coating is set you can break it into chunks. If it lasts more than 1 day (which it never does in our house) you will want to store it in an airtight container. There you have it delicious carmel corn in 15 minutes.
